Simple Spaghetti

Let’s start with the classic recipe.

Ingredients:

1 onion – small
1 capsicum – finely diced
2 whole cloves of fresh garlic
3 tablespoon butter
500gm Spaghetti
2 tetra packs of Tomato Puree
Italian seasoning, salt, and pepper – as per taste

Method:

Boil the spaghetti in a large pot of water as per directions. Spaghetti normally takes about 9-10 minutes to reach al dente.

In a pan, melt the butter. Make sure that the butter does not burn.
Crush the garlic cloves and add it to the butter until the butter absorbs the garlicky flavour.
Add the onions and capsicum and sauté it until the onion turns translucent.
Now add the tomato puree and all the herbs and spices.
Allow it to simmer for about 10-12 minutes until the tomatoes turn a deep shade of red.

You can serve this dish in two ways. First, you can plate the spaghetti and drizzle the sauce on top. Second, you can add the spaghetti to the pan and mix it thoroughly until the spaghetti is coated in the sauce.

Spaghetti Bolognese

Yet another well-known Spaghetti dish which is wholesome and rich due to the rich texture of the minced meat.

Ingredients:

2 onions (medium) – chopped
1 tablespoon olive oil
2 garlic clove – crushed
500gm minced meat
2 tetra packs of tomato puree
250mL chicken stock
1 tablespoon tomato ketchup
Italian seasoning, salt and ground pepper – as per taste.
400gm Spaghetti

Method:

Boil the spaghetti in a large pot of water as per directions. Spaghetti normally takes about 9-10 minutes to reach al dente.

In a pan, sauté the onions and garlic in the olive oil on high heat. They should be properly caramelised.
Stir in the minced meat and allow it to semi-cook.
Add the tomato puree, chicken stock and tomato ketchup. Sprinkle all the herbs and seasoning on top.
Put on the lid and let it simmer for 15 minutes.
Add the spaghetti and make sure it is well coated with the sauce.
Plate the dish and you can even sprinkle Parmesan cheese on top before digging in!

Spaghetti Garlic Noodles

Desperate hunger calls for desperate measures. Spaghetti is not meant to be noodles, but it sure does taste pretty good like one!

Ingredients:

500gm Spaghetti
2 tablespoon olive oil
5 garlic cloves – minced
Paprika flakes, salt, black pepper – as per taste

Method:

Boil the spaghetti in a large pot of water as per directions. Spaghetti normally takes about 9-10 minutes to reach al dente. Reserve 1 cup of the water.
In a pan (or a wok, if you prefer to be fancy) add the olive oil, garlic and paprika flakes. Keep the heat on medium-low. Season it with salt and pepper. Sauté it for 30 seconds until it turns aromatic.
Dump in the pasta and set it to make sure that it does not stick to the sides. Pour in some of the starchy water to deglaze every once in a while.

You can give it a stronger zing of garlic by adding garlic powder. Salut!
